“What’s Next” Wine Dinner: 2019’s Top Up & Coming Winemakers and Food Trends

A selection from America’s top up & coming winemakers + 2019’s most exciting food trends will be on full display when Skopelos at New World and Southern Glazer Wine & Spirits host the WHAT’S NEXT wine dinner on Thursday, February 21st.

Coming out of California & Oregon, new winemakers Intrinsic, Fortress, Willakenzie, and Edmeades are gaining attention as ones to watch with their bold/exceptional flavors and recognition from Wine Enthusiast and Wine Spectator. Executive Chef Gus Silivos and Chef de Cuisine Takara Hein hand-selected 6 exceptional wines from these new west coast winemakers to showcase, and then created an innovative menu that will introduce you to some of the most exciting food trends expected this year. From unusual seafood/shellfish and underutilized meats; to Pacific Rim flavors, Korean fermented vegetables, and plant based proteins; to the resurgence of adaptogenic herbs, ancient grains, and tableside desserts, the 6 course wine dinner is a reservation-only, one night affair.

The menu for the night includes:

WELCOME/FIRST COURSE

GRAZING TABLE centerpieces composed of crudite, dips, charcuterie and cheese, to be enjoyed at your leisure

ANCIENT GRAIN BREAKFAST SALAD quinoa, wheat berry, sorghum, barley, pancetta, purple potatoes, sunny side quail egg, dijon vinaigrette

Fortress Sauvignon Blanc

PACIFIC RIM RAZOR CLAMS razor clams, soy chili sauce, house-made Korean style fermented vegetables

Willakenzie Estate Pinot Grigio

FOURTH COURSE

IMPOSSIBLE BAHN MI slider flavored with adaptogenic herbs, Japanese pickled vegetables, house-made baguette

Edmeades Zinfandel
